Strawberry Spice Cake

Growing up, my mom always made the best cakes for the 4th of July (it is my father's birthday). I remember her doing strawberries and blueberries and making a flag out of a cake. So to celebrate the holiday this year, I decided to make a cake with strawberries! This was an experiment that turned out absolutely heavenly!

DOUBLE SPICE CAKE

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
1 tablespoon ground cinnamon
1 tablespoon ground cardamom
1 tablespoon ground cloves
2 tablespoon ground allspice
2 tablespoon ground nutmeg
1/2 cup butter
2 eggs
1 cup milk
2 tablespoons vanilla extract

1. sift together the flour, baking powder, sugar, and spices.
2. melt butter and mix in along with the milk.
3. stir in the eggs and vanilla extract.
4. pour into a greased cakepan and bake in a preheated oven at 350 degrees for 30 minutes.

CREAM CHEESE FROSTING

16 oz cream cheese, softened
1/2 cup powdered sugar
1 tablespoon vanilla extract

1. cream together all ingredients until well blended.
2. spread over cooled spice cake.

JUICY STRAWBERRIES

1 lb strawberries
1/2 cup sugar

1. cut off tops of strawberries and quarter them.
2. put strawberries into a bowl and pour sugar over, mixing til well covered. let rest 1-2 hours.
3. spoon over slices of cake.
